Description

Are you looking for a holiday snack? Look no further than these no-bake gingerbread bites! The natural sugars coming from the dates, and heart healthy fats from the pecans and coconut keep your energy steady as you prepare for your winter holidays.

These gingerbread bites can be rolled into balls with your hands or pressed into a 8×8 casserole dish and sliced or cut with cookie cutter. We even include an alternative to the confectionary icing normally found on gingerbread cookies.

Have your children help you with decorating this date-sweetened treat!


Ingredients

for the bites:

  • 10 Medjool dates
  • ¾ cup pecan halves
  • ½ cup coconut flakes
  • 1 1/2 tablespoons blackstrap molasses
  • 1 tablespoon nut butter of choice (we used peanut butter)
  • 3/4 teaspoon ground ginger (add more or less depending on your preferences)
  • 1/4 teaspoon ground cinnamon
  • Dash of nutmeg

for the decoration (optional):

  • 1/4 cup coconut butter
  • 1 teaspoon maple syrup

Instructions

  1. Process the dates, pecans, and coconut flakes in a food processor or blender until finely chopped.

  2. Add the nut butter, molasses and spices. Pulse until the mixture begins to come together.

  3. Roll the mixture into 1-inch balls with your hands or press into a 8×8 casserole dish lined with parchment paper for bars. Place into the freezer for about 30 minutes.

  4. If decorating, melt the coconut butter and whisk in maple syrup until smooth. Dip each energy ball into the coconut butter mixture and transfer to a plate.

  5. If you are making bars you can use a cookie cutter to cut shapes and decorate with coconut butter mixture.

For best results, keep in a container in the freezer or refrigerator. Enjoy!
