Pistachio Crusted Chicken Breast

This PISTACHIO CRUSTED CHICKEN is definitely going to be on your menu tonight! We know as the week goes on, and life happens, brainstorming (and cooking) delicious dinners can be difficult. This minimal ingredient and quick-prep chicken will take care of that.

Chicken breast, dijon mustard, crushed pistachios, and s&p. This recipe is a perfect protein to top any salad or to eat with your favorite roasted vegetables!

Pistachio Crusted Chicken Breast Recipe


  • 4 small chicken breasts (about 1 lb.)

  • 1/4 cup roasted pistachios, shelled and crushed

  • 2 tbsp dijon mustard

  • Salt and pepper, to taste


  1. Preheat oven to 400 degrees Fahrenheit.

  2. Dry chicken with paper towel.

  3. Salt and pepper both sides of chicken. Spread the dijon mustard on the top of chicken breasts. Press pistachios onto the top of the chicken.

  4. Bake in preheated oven for 15-20 minutes, depending on the thickness of your chicken.


Note: you can always sub half of the crushed pistachios for panko breadcrumbs for a chicken tender like texture.

Bonus tip: sub out pistachios, if they aren't your thing, for any other crushed nut.
